Ingredients
  

To make Steamed Rice:

  • 2 glass fragrant rice
  • 3 glass water or chicken soup
  • 1 teaspoon salt
  • 1 teaspoon vegetable oil

To make Sauteed Scallops:

  • 1 kg scallops, washed
  • 2 teaspoon olive oil
  • 4 garlic chopped
  • 1 onion chopped
  • 1 red bell pepper sliced (optional)
  • 1 glass white wine
  • 2 teaspoon butter
  • Salt and pepper to taste
  • Fresh coriander, chopped (for garnish)
  • Lemon wedges (to serve)

Instructions
 

Prepare Steamed Rice

  • Rinse the fragrant rice under cold running water until the water runs clear.
  • In a large pot, combine rice with water or broth, salt and vegetable oil. Stir gently to combine.
  • Heat the pot over high heat until the water boils. Once it boils, reduce the heat to low, cover the pot and cook for about 15-20 minutes until the rice is cooked and the water is absorbed.
  • Turn off the heat and let the pot rest for another 10 minutes with the lid on. Then, use a fork to arrange the rice on top.

Stir-fried Scallops:

  • In a large skillet, heat olive oil over medium heat.
  • Add minced garlic, sliced onion and bell pepper (if using) to pan, saute until onion is soft and garlic is fragrant, about 3-4 minutes.
  • Increase heat to medium high, add scallops to pan, stir in garlic and onion mixture.
  • Pour in the white wine, cover the pan and cook for about 5-7 minutes until the scallops open. Discard any scallops that do not open.
  • Reduce heat to low, add butter and stir until butter melts and coats scallops. Season with salt and pepper to taste.

Serve:

  • Place the steamed rice on a plate.
  • Place the sauteed scallops and sauce over the rice.
  • Garnish with chopped coriander and serve with lime wedges on the side.
